Homemade Pizza – Pizza Dough Recipe

We have been making pizza at home for a while.  First, we started out with Boboli crust.  Then, we moved on to using frozen dough from H-E-B.  Sometimes though, when we use frozen dough it doesn’t roll out easily or parts of the dough have freezer burn.  So, I searched for an easy pizza dough recipe.  I found CopyKat Recipe’s post, How to make Pizza Dough, and mostly used that recipe today. The only thing different I did was add about 1/2 teaspoon of sugar.

I used my food processor and then let the dough rise for a few hours upstairs in the warmest part of the house.

My husband is the pizza guy. Being from the northeast, he’s kind of picky about his pizza. He is the one that usually makes the pizza in our house.

My husband said the dough was a little sticky, but was easily able to roll it out. It was a lot better than thawed pizza dough.

And the final result…yum. The kids liked it. The husband liked it. I liked it. Yea! It was a family hit. It tasted like the frozen dough only better, fresher.

Do you know all that food that gets wasted each week sitting in the back of your refrigerator? Why not use and turn it into a healthy breakfast. That leftover salad, extra veggies from dinner the other night, one slice of lunch meat that is not enough for a sandwich,… All of these can be used to make a breakfast casserole.

Clean-out-the-fridge Healthy Breakfast Casserole (Paleo and gluten free)

First, start with your leftovers. Combine them in a bowl. Add a little seasoning, if needed.

In a separate bowl whisk a few eggs. Add some seasoning to the eggs. Then, add them to your leftovers bowl. Mix thoroughly.

You want your mixture to be slightly runny looking. If it is mostly solids, add another egg or two.

Pour the mixture into a greased baking dish or individual baking cups.

Bake at 350 degrees for 20-30 minutes until the egg is set and a toothpick comes out clean when inserted.

Pancake Recipe with Just Eggs and Bananas – What not to do

Have you seen those pictures on Facebook of pancakes made with just eggs and bananas?  They are a great gluten-free pancake alternative.  I looked for the Pancakes with Eggs and Bananas recipe.  Most of the recipes I saw said to use 2 eggs for 1 banana.

Here’s what I did, so you know what no to do.  Most of the times bloggers post successful food creations.  I’m going to show you and tell you what I did so maybe you’ll have better success than me with the Pancakes with Eggs and Bananas Only recipe.

I mashed up 2 bananas in one bowl and whisked 4 eggs in another bowl.  Then I combined everything into to the egg bowl and mixed it up some more.  My husband and I agreed that the batter looked really thin, so I added another banana.



I melted some butter on a skillet and then, with a ladle, spooned out 4 pancakes onto the hot skillet at medium heat.  The batter was pretty runny, so I tried to keep pushing it back into a somewhat circle.  The pancake was very difficult to flip. When I used one spatula, it made a big mess.  I ended up using a spatula in both hands on 2 ends of the pancake and was able to flip it better.  I placed the cooked pancakes on a plate, and started the next round.  Hint – use lots of butter between each round.  I did use butter, but it was not enough.  The pancakes burned easily.  I had a hard time getting the right amount of time and heat so that they would cook, but not burn.



A few of the pancakes came out looking somewhat like pancakes.  My kids refused to even try them.  My husband and I had a few.



They were definitely different.  They were more moist than regular pancakes and definitely pretty sweet from the banana.  I’m not sure if I would make these again.

BRCA Positive Breast Cancer Survivor Response to Angelina Jolie’s New York Times Article

First, I would like to thank Angelina Jolie Pitt for sharing her experience and knowledge to help others, most recently in Angelina Jolie Pitt: Diary of a Surgery.

Elie Wiesel once said, “Whoever survives a test, whatever it may be, must tell the story. That is his duty.” I absolutely agree!

I am a breast cancer survivor diagnosed at age 31 (5 years ago) and a mom of 2 young boys. I am also BRCA1 positive. I have been trying to help others by also sharing my experience and knowledge. I had a bilateral mastectomy, reconstruction, and chemotherapy. I am now facing tough decisions regarding my ovaries. It is wonderful to learn from others going though similar experiences. If you’ve ever had a medical issue, you know there are a variety of opinions on treatment, prevention, surveillance, and more.  Angelina says, “There is more than one way to deal with any health issue. The most important thing is to learn about the options and choose what is right for you personally.” I appreciate Angelina Jolie and all of the others that have chosen to be open about their health and share personal details.

I feel as though my ovaries are a ticking time bomb. At the age of 36, I’ve been advised by some doctors to keep my ovaries for a few more years to delay the onset of surgical menopause. Not only is surgical menopause uncomfortable, there are detrimental effects to the body such as bone density loss and heart issues. This is why many women are given low dose hormones temporarily after surgery.

So, here I am sitting on this decision like many other BRCA+ women. Yes, I am getting regular scans and blood work, but as Angelina Jolie pointed out, these tests are not great indicators of early ovarian cancer. It is all we have for now.

Just to pass some information along… One theory on the origins of ovarian cancer is that it may begin to develop in the fallopian tubes and then spread. I found out about a study at MD Anderson for BRCA women (Prophylactic Salpingectomy With Delayed Oophorectomy). In the study, women first have only the fallopian tubes removed and then a few years later have the ovaries removed. This delays surgical menopause a few more years, but still perhaps protects the ovaries.

Good luck to all of the women out there facing these tough decisions. My thoughts are with you.
